I nerd del whisky sicuramente sapranno che per produrre i nostri amati single malt generalmente viene utilizzata la doppia distillazione in Scozia e la tripla distillazione in Irlanda.
Doppia e tripla distillazione:
La doppia distillazione consiste nell'utilizzare in sequenza due alambicchi, il wash still per la prima distillazione, dove si ottiene il low wines (20-25% ABV). Questo low wines viene impiegato per essere distillato nel secondo alambicco, chiamato spirit still, dal quale si ottiene (una volta eliminate le teste e le code, da utilizzare nella successiva distillazione con il nuovo low wines) il new make spirit (70-75% ABV), che andrà a maturare nella botte.
La tripla distillazione utilizza in sequenza tre alambicchi (denominati rispettivamente wash still, feints still e spirit still). Questa volta lo spirit still riceverà il cuore del feints still e i cosiddetti strong feints (teste e code eliminati dalla precedente distillazione) ed il relativo cuore è lo spirito (82-85% ABV) che verrà maturato in botte. L'ulteriore distillazione produce un distillato più morbido e pulito, tuttavia comporta anche una perdita del profilo aromatico iniziale.

Distillazioni particolari:
Ci sono due celeberrime distillerie scozzesi (segnalatemi se ce ne sono altre in Scozia e nel mondo) che non utilizzano la doppia o tripla distillazione, avete indovinato quali sono?
Springbank: 2,5 distillazioni
Mortlach: 2,81 distillazioni
Non ci provo nemmeno a spiegarvi come si ottengono 2.81 distillazioni! Mi limito solo a dire che Mortlach utilizza una combinazione di ben 6 alambicchi, una singolarità nel mondo del whisky.
Un blogger ha provato a spiegare nel dettaglio come salta fuori questo 2.81.

Stage 2: Adding the ratios together to give the distillation figure (the simple way of doing this gives a figure of 2.7 which is often what some people claim as being Mortlach’s number of distillations)
0.67925+0.64151+1.35849 = 2.67925 (The 2.7 figure that some people often claim is the ‘true’ distillation ratio of Mortlach)
Stage 3: Incorporating what I see as a correction factor for the distillation process, which when added to the figure of 2.7 gives the stated figure of 2.81
1.35849-1.32076 x 3.396226 = 0.12814
2.67925+0.12814 = 2.80739 (2.81)
